VENISON TALATRETA WITH MICRO MIX

Ingredients
- 200g venison lion
- 50ml olive
- 10g ginger
- 5g garlic
- 5g chilli
- 1g coriander
- 1g salt
- 1g cracked black pepper
- 20g micro mix
- 20g butter
Method
- Start by dicing the chili, grate the ginger, garlic and chop the coriander
- Add olive oil until it becomes a dressing-like texture
- Place a small pan on a high heat
- Season the venison with salt and rub olive oil over it
- Once the pan is hot, place the venison in the pan and add butter
- Cook the venison until it is 45c in the middle (45c medium rare, 50c medium, 60 well done)
- Once it reaches the core temp remove from the pan
- Leave the venison to rest for 5 minutes
- Slice the venison as thin as you can
- Plate your dish - start by dressing the meat and then place the micro mix on the top and dress again!
