Ingredients

  • 50g king oyster mushroom
  • 100g shiitake mushroom
  • 5g garlics
  • 2 grated ginger
  • 2ml mirin
  • 20ml rice wine
  • 10g komatsuna
  • 1 spring onion
  • 20g diced white onion
  • 50ml sesame oil
  • 1g salt
  • 1g black pepper

Method

  • Cut the king oyster in half and score the cut side
  • Slice shiitake mushrooms up
  • Place a frying pan on high heat and drizzle with oil
  • Once the pan is smoking hot, drop the mushrooms into the pan and place the king oyster side down
  • Season with the salt and pepper
  • Cook for 2-3 minutes then add in the chopped white onion, ginger and garlic
  • Toss in well, then add the liquids to the pan and place a lid on for 2 minutes
  • Just before serving add in the komatsuna
