KOMATSUNA AND MUSHROOM

Ingredients
- 50g king oyster mushroom
- 100g shiitake mushroom
- 5g garlics
- 2 grated ginger
- 2ml mirin
- 20ml rice wine
- 10g komatsuna
- 1 spring onion
- 20g diced white onion
- 50ml sesame oil
- 1g salt
- 1g black pepper
Method
- Cut the king oyster in half and score the cut side
- Slice shiitake mushrooms up
- Place a frying pan on high heat and drizzle with oil
- Once the pan is smoking hot, drop the mushrooms into the pan and place the king oyster side down
- Season with the salt and pepper
- Cook for 2-3 minutes then add in the chopped white onion, ginger and garlic
- Toss in well, then add the liquids to the pan and place a lid on for 2 minutes
- Just before serving add in the komatsuna
