Sea bass with brassica salad

Ingredients
- 2 fillets of seabass
- 5g micro kale
- 5g micro broccoli
- 5g micro kohlrabi
- 5g micro lettuce
- 5g cavolo nero
- 50g cooked artichoke
- 50g sun dried tomatoes
- 20ml olive
Method
- Drizzle olive oil in the pan
- Once hot, place the sea bass skin side down
- While the fish is cooking, chop the sun-dried tomato as fine as you can
- Mix all the micros in a bowl and dress with some of the sun-dried tomato oil
- Place the salad on the bottom of the plate
- Dress with the chopped sundried tomatoes and artichokes
- Once the fish is almost cooked, flip it over and squeeze lemon juice in the pan
- Remove from the heat and plate the sea bass on top of the salad
