Pork peach and fennel

  • 2x 150g pork loin
  • 30g butter
  • 1 clove of garlic
  • 2g fennel
  • 1 peach
  • 50g kale
  • 3g fennel
  • 1 lemon


  • Place a pan of salty water on the stove and bring to the heat 
  • Whilst the water boils, add the kale in and cook for 5 minutes, drain and leave to cool
  • While the kale is cooking, clean the pork loin of any sliver skin
  • Place a frying pan on a high heat
  • Rub olive oil over the pork and season with salt
  • Place in the pan and colour all over, once coloured add in the butter, let it foam around the pork then add in the fennel and garlic
  • Place in a oven pre heated to 180c
  • After 3 minutes cut the peach into 8 and add it to the pork pan
  • Cook for 5 more minutes/ or till the pork is cooked
  • Plate the kale and peaches to one side of the plate, slice the pork and season with the fennel and lemon to finish!
