Pork peach and fennel

Ingredients
- 2x 150g pork loin
- 30g butter
- 1 clove of garlic
- 2g fennel
- 1 peach
- 50g kale
- 3g fennel
- 1 lemon
Method
- Place a pan of salty water on the stove and bring to the heat
- Whilst the water boils, add the kale in and cook for 5 minutes, drain and leave to cool
- While the kale is cooking, clean the pork loin of any sliver skin
- Place a frying pan on a high heat
- Rub olive oil over the pork and season with salt
- Place in the pan and colour all over, once coloured add in the butter, let it foam around the pork then add in the fennel and garlic
- Place in a oven pre heated to 180c
- After 3 minutes cut the peach into 8 and add it to the pork pan
- Cook for 5 more minutes/ or till the pork is cooked
- Plate the kale and peaches to one side of the plate, slice the pork and season with the fennel and lemon to finish!
