Pea Shoot Orecchiette

Ingredients

  • 400g 00 pasta flour
  • 200ml warm water
  • 5g slat
  • 20g pea shoots
  • 1g chilli
  • 1g garlic
  • 20ml olive oil
  • 20g parmesan cheese

Method

Orecchiette:

  • Start the with the flour and salt in a pile, and slowly add the warm water and work it into a dough
  • Knead the dough for 5-10 minutes
  • Then start to roll into long sausages
  • Cut the dough into ½ cm bits. Using the back of a knife you push them down to make a shell shape
  • Place on a floured tray till cooking

Cooking:

  • Place a pan of salted water to boil
  • In a frying pan drizzle the olive oil, once warm, add the garlic and chilli
  • Once the water is boiling, add the pasta
  • Take most of the pea shoots, add it to the frying pan and wilt quickly
  • When the pasta floats, add them to the pan - toss and plate
  • Finish the plate with the rest of the pea shoots and garnish with parmesan cheese
