Salt cod with coriander

  • 2 x 150g cod portions
  • 50g salt
  • 100g green bean
  • 2 cloves of garlic
  • 15g coriander 
  • 1 lemon
  • 20ml olive oil
  • 50g shallots


  • Cover the cod in salt and place in the fridge for 2 hours.
  • After 2 hours wash off the salt and dry well.
  • Place a small frying pan on a high heat. 
  • Drizzle with olive and place cod into the pan. 
  • Place in the oven and cook for 10 minutes.
  • Whilst the cod is cooking, bring a pan of water to boil and cook the green beans for 5 minutes.
  • Dice the shallot small cubes, slice 1 clove of garlic and put it into a small pan with olive oil.
  • Remove majority of the coriander, chop and mix with a olive oil.
  • Season with some lemon zest.
