Salt cod with coriander

Ingredients
- 2 x 150g cod portions
- 50g salt
- 100g green bean
- 2 cloves of garlic
- 15g coriander
- 1 lemon
- 20ml olive oil
- 50g shallots
Method
- Cover the cod in salt and place in the fridge for 2 hours.
- After 2 hours wash off the salt and dry well.
- Place a small frying pan on a high heat.
- Drizzle with olive and place cod into the pan.
- Place in the oven and cook for 10 minutes.
- Whilst the cod is cooking, bring a pan of water to boil and cook the green beans for 5 minutes.
- Dice the shallot small cubes, slice 1 clove of garlic and put it into a small pan with olive oil.
- Remove majority of the coriander, chop and mix with a olive oil.
- Season with some lemon zest.
