Garlic chive and goat cheese mushroom

Ingredients

  • 4 large field mushrooms
  • 125g goats cheese
  • 10g garlic chive
  • 10ml olive oil
  • 20g mixed seeds
  • 1g salt

Method

  • Pre heat the oven @ 180c
  • Peel the outer skin of the mushroom and remove the stalk
  • Season with salt and drizzle olive oil
  • Place on a tray and cook for 5 minutes
  • Chop the goat cheese into 1/2cm cubes
  • Finely chop the garlic chive (leave a little to use as garnish at the end)
  • Mix the garlic chive with the goat cheese
  • Remove the mushroom from the oven and fill the centre of them with the goat cheese and garlic chives 
  • Place back in the oven for 5 more minutes
  • After the 5 minutes have passed top the mushrooms with the mixed seeds
  • Place back in the oven for final 5 minutes
  • Garnish with fresh garlic chives and serve
