Rainbow trout with micro lettuce
Take a break and mix up a nutritious, fresh, tasty salad!

Ingredients
- 2 rainbow trout fillets
- 5g garlic
- 2g salt
- 100ml white wine
- 50ml white wine vinegar
- 5 radishes
- 1 avocado
- 15g micro lettuce
- 10ml olive oil
- 4ml balsamic vinegar
Method
For the fish:

Bring 400ml water to the simmer

Add garlic, salt, white wine and vinegar

Bring back to the simmer and place the fillets of fish in and pull off the heat

Leave to cool

Once cool flake the fish
For the dressing:
- Mix olive oil and vinegar
Build your salad:
- Plate your minicrops micro salad
- Slice the radish and avocado and spread on top
- Add your fillets
- Drizzle your dressing on top of the salad
