Chicken with red cabbage and Cavolo Nero

Ingredients
- 2 chicken breasts
- 1 clove of garlic
- 50g butter
- 100ml chicken stock or veg stock
- 1g salt
- 100g cavolo nero
- 10g micro red cabbage
Method
- Place pan on a high heat.
- Pre-heat your oven to 180c.
- Season chicken with salt.
- Drizzle the pan with olive oil.
- Place the chicken skin side down in the pan.
- Once it has taken a little colour, roll the chicken over to sire the under side.
- Flip back on to the skin, add butter and garlic clove and place in the oven for 18 minutes.
- After 18 minutes remove from the oven and place on the side to rest for 2 minutes before serving.
- In the pan add the stock and bring to the simmer on the stove.
- Pass through a fine sieve.
- Place a pan of salted water on to boil.
- Once boiling drop in the cavolo nero.
- Cook for 5 minutes.
- Drain off and plate.
- Garnish with cavolo nero with half the red cabbage.
- Plate the chicken on top of the cabbage and cavolo nero.
- Top the dish with the rest of the red cabbage.
- Finish with the sauce.
