Chicken with red cabbage and Cavolo Nero

  • 2 chicken breasts 
  • 1 clove of garlic
  • 50g butter
  • 100ml chicken stock or veg stock
  • 1g salt
  • 100g cavolo nero
  • 10g micro red cabbage


  • Place pan on a high heat.
  • Pre-heat your oven to 180c.
  • Season chicken with salt.
  • Drizzle the pan with olive oil.
  • Place the chicken skin side down in the pan.
  • Once it has taken a little colour, roll the chicken over to sire the under side.
  • Flip back on to the skin, add butter and garlic clove and place in the oven for 18 minutes.
  • After 18 minutes remove from the oven and place on the side to rest for 2 minutes before serving.
  • In the pan add the stock and bring to the simmer on the stove.
  • Pass through a fine sieve.
  • Place a pan of salted water on to boil.
  • Once boiling drop in the cavolo nero.
  • Cook for 5 minutes. 
  • Drain off and plate.
  • Garnish with cavolo nero with half the red cabbage.
  • Plate the chicken on top of the cabbage and cavolo nero.
  • Top the dish with the rest of the red cabbage.
  • Finish with the sauce.
