Tuna and borage poke

  • 200g sushi grade tuna
  • 20g borage
  • 10g mustard frills
  • 1g sesame seeds
  • 1g red chilli
  • 20g spring onion
  • 20ml soy sauce
  • 5ml mirin
  • 5ml rice wine
  • 100g cooked sushi rice


  • Dice the tuna into ½ cm cubes.
  • Thinly chop the spring onions and chili.
  • In a small bowl mix the soy, mirin and rice wine, and add the sesame seeds.
  • Place tuna and the borage in a mixing bowl and season with the dressing.
  • Add the spring onion.
  • Plate with rice and the mustard frills to finish.
