Ingredients
- 200g sushi grade tuna
- 20g borage
- 10g mustard frills
- 1g sesame seeds
- 1g red chilli
- 20g spring onion
- 20ml soy sauce
- 5ml mirin
- 5ml rice wine

100g cooked sushi rice
Method
- Dice the tuna into ½ cm cubes.
- Thinly chop the spring onions and chili.
- In a small bowl mix the soy, mirin and rice wine, and add the sesame seeds.
- Place tuna and the borage in a mixing bowl and season with the dressing.
- Add the spring onion.
- Plate with rice and the mustard frills to finish.
