LEMON BASIL AND TOMATO SALAD

Ingredients
- 50g lemon basil
- 200ml sunflower oil
- 200g tomatoes
- 2g salt
- 1g black pepper
- 20g Sweet yellow pepper
- 2g lemon bails
Method
- Place the oil in a large pan on the heat, bring up to 60c, once at 60 cut up the lemon basil and mix into the oil
- Increase heat to 70c
- Pour into a blender and blend on high speed until cool
- Pass through a fine sieve and leave to chill
- Cut the tomato to your preference, drizzle 1 tablespoon of lemon basil oil over and also season with the salt and pepper
- Mix and leave for 5 minutes
- Slice the sweet yellow peppers as thin as you can and add them to the tomatoes
- Plate and finish with the fresh lemon basil and a drizzle with lemon basil oil
