LEMON BASIL AND TOMATO SALAD

Ingredients

  • 50g lemon basil
  • 200ml sunflower oil
  • 200g tomatoes
  • 2g salt
  • 1g black pepper
  • 20g Sweet yellow pepper
  • 2g lemon bails

Method

  • Place the oil in a large pan on the heat, bring up to 60c, once at 60 cut up the lemon basil and mix into the oil
  • Increase heat to 70c
  • Pour into a blender and blend on high speed until cool
  • Pass through a fine sieve and leave to chill
  • Cut the tomato to your preference, drizzle 1 tablespoon of lemon basil oil over and also season with the salt and pepper
  • Mix and leave for 5 minutes
  • Slice the sweet yellow peppers as thin as you can and add them to the tomatoes
  • Plate and finish with the fresh lemon basil and a drizzle with lemon basil oil
