Place the lamb neck in the pan and colour all over
Once coloured all over, add the butter and garlic clove
Once the butter starts to foam, pop the lamb neck in the oven (180c) for 4-5 minutes or until the core is 50c (pink), for well done cook for 12 minutes
Once the lamb is cooked to your preference, remove from the oven
Place a pan on high heat and drizzle with olive oil
Drop in the samphire
Toss quickly
Add few drops of water
Now add in most of the garlic chives, leave a little to garnish the plate
Remove form the pan and plate
Carve the lamb and sit it on the garlic chive and samphire
Top with the remainder of the garlic chive!
