LAMB WITH GARLIC CHIVE AND SAMPHIRE

Ingredients

  • 2 x 150g lamb neck fillets
  • 1 clove of garlic
  • 5ml olive oil
  • 20g butter
  • 1g salt
  • 120g samphire
  • 10g garlic chive
  • 10ml olive oil

Method

  • Place your pan on a high heat
  • Season the lamb neck with salt
  • Drizzle the pan with olive oil
  • Place the lamb neck in the pan and colour all over
  • Once coloured all over, add the butter and garlic clove
  • Once the butter starts to foam, pop the lamb neck in the oven (180c) for 4-5 minutes or until the core is 50c (pink), for well done cook for 12 minutes
  • Once the lamb is cooked to your preference, remove from the oven
  • Place a pan on high heat and drizzle with olive oil 
  • Drop in the samphire
  • Toss quickly
  • Add few drops of water
  • Now add in most of the garlic chives, leave a little to garnish the plate
  • Remove form the pan and plate
  • Carve the lamb and sit it on the garlic chive and samphire
  • Top with the remainder of the garlic chive!
