Chicken broth with micro pak choi

Ingredients

  • 2 chicken legs
  • 1g thyme
  • 3 shallots peeled
  • 3 peeled carrots
  • 1 bay leaf
  • 1 clove of garlic
  • 1g black pepper corns
  • 10ml soy
  • 3ml mirin
  • 2g slat
  • 1g thyme
  • 1g garlic chive
  • 10g pak choi
  • 50g red peppers
  • 50g bean sprout

Method 

Broth:

  • Place all the ingredients in pan or pressure cooker and cover with water 
  • Bring to the simmer (if in a pan), and cook for 30 minutes - For pressure cooker, cook for 30 minutes
  • Strain of the liquid into a saucepan
  • Season the broth with soy, mirin and salt
  • Shred chicken into strips 
  • Dice the carrot and shallots

 Plating:

  • In the bowl place the chicken and diced cooked veg
  • Top with all the micros, bean sprouts and red peppers
  • Finish by pouring over the broth
