Chicken broth with micro pak choi

Ingredients
- 2 chicken legs
- 1g thyme
- 3 shallots peeled
- 3 peeled carrots
- 1 bay leaf
- 1 clove of garlic
- 1g black pepper corns
- 10ml soy
- 3ml mirin
- 2g slat
- 1g thyme
- 1g garlic chive
- 10g pak choi
- 50g red peppers
- 50g bean sprout
Method
Broth:
- Place all the ingredients in pan or pressure cooker and cover with water
- Bring to the simmer (if in a pan), and cook for 30 minutes - For pressure cooker, cook for 30 minutes
- Strain of the liquid into a saucepan
- Season the broth with soy, mirin and salt
- Shred chicken into strips
- Dice the carrot and shallots
Plating:
- In the bowl place the chicken and diced cooked veg
- Top with all the micros, bean sprouts and red peppers
- Finish by pouring over the broth
